Ingredients (Buy locally grown organic ingredients, if possible)
1 pound fresh asparagus spears, trimmed
2 teaspoons clarified butter or ghee, more as needed
Rock salt (saindhav salt) and pepper to taste
1. Wash and prepare the asparagus by cutting off any tough ends. Discard the tough ends.
2. Add salt, pepper and the ghee to the asparagus in a mixing bowl. Mix it well. Cover and keep it aside for approximately 1/2 hour.
3. Preheat oven to 400F. Transfer the contents of mixing bowl to a large baking dish or a foil covered pan. Arrange the asparagus in a single layer and bake until just tender, 10-15 minutes depending on thickness. After first 5 minutes of baking, check and turn the asparagus over to bake the pieces evenly. Remove from oven and serve.
Optional: drizzle with fresh lemon juice just before serving.
