Narali Bhat Recipe (Sweet Coconut Rice)

Coconut Rice
  • Buy locally grown organic ingredients, if possible

    • 1 cup white rice, raw

    • 3 teaspoons ghee (make organic ghee at home)

    • 7-8 whole cloves

    • 2 cups water, hot

    • 1 1/2 cup fresh grated coconut or shredded coconut

    • 1 1/2 cup jaggery (gud), powdered

    • 4 green cardamoms, whole or freshly ground

    • 4-5 strands saffron

    • A pinch of rock salt (saindhav namak)

  • Rice and ghee together nourish the dhatus (body tissues) and enhance ojas (vital essence). Coconut, with its cooling properties, pacifies fiery Pitta,.

  • Due to its sweet and heavy nature, those with a dominant Kapha dosha should enjoy Narali Bhat in moderation.

Recipe Serves 3-4

Directions:

  1. Begin by cleansing and soaking the rice, allowing it to soak in water for two hours. Upon completion, ensure thorough draining.

  2. In a pan, heat up the ghee, add cloves and the soaked rice, sauté for a short while (1-2 min). Gently pour in hot water and let it simmer until the rice grains cooked throughly.

  3. In another pan, add ghee and sauté coconut for 1-2 min, add jaggery, cardamom, saffron, and a pinch of salt and mix it well. Add the cooked rice into this, let it cook for a few more moments on gentle heat.

  4. Before serving, garnish with shredded coconut.
