Besan Burfi Recipe

  • Buy locally grown organic ingredients, if possible

    • 6 Tablespoons ghee (make organic ghee at home)

    • 1 cup besan (gram flour)

    • 1/4 cup raw almonds, coarsely ground

    • 1/2 cup fresh grated coconut or shredded coconut (optional)

    • 5-6 green whole cardamom, freshly ground

    • 1/2 cup water, room temperature

    • 1 cup rock sugar (mishri) or raw sugar

  • Ghee is known to harmonize both Vata and doshas, making it beneficial for individuals with these predominant doshas.

  • Those with high Kapha or diabetes should enjoy Besan Barfi in moderation due to its sweet nature.

Recipe Serves 3-4

Directions:

  1. Heat ghee on a low-medium flame. Add besan (gram flour) and stir continuously to avoid burning. Keep stirring until the besan turns a deep golden brown color.

  2. Add the crushed almonds to the roasted besan and mix. After a couple of minutes, mix in the shredded coconut and ground cardamom.

  3. Lightly grease an 8" square glass pan with some ghee and set it aside.

  4. In a separate pan, combine water and sugar. Stir until the sugar dissolves completely. Bring the mixture to a boil and keep it boiling for about 2-3 minutes. Then, remove it from the heat.

  5. Pour the hot sugar syrup into the besan mixture. Stir them together well. After mixing, transfer the mixture to the greased pan. Allow it to cool. Once set, cut it into desired shapes and enjoy.
