Cilantro Chutney
  • Buy locally grown organic ingredients, if possible

    • 1 1/2 cups cilantro leaves, washed

    • 1 teaspoon crushed ginger

    • 1/4 teaspoon cumin seeds (jeera), roasted

    • 1/4 teaspoon red chilli flakes (optional)

    • 1 Tablespoon lime juice, more as needed

    • Rock salt (saindhav salt) to taste

  • Cilantro, or Dhanyaka in Sanskrit, is a versatile herb with numerous benefits in Ayurveda. It possesses cooling properties, aids digestion, and has anti-inflammatory effects, making it beneficial for Pitta and Kapha doshas.

  • Its excessive consumption by Vata-dominant individuals may lead to an imbalance, necessitating moderation in its use.

Recipe Serves 4-6

Directions:

  1. Grind cilantro, ginger, chills, and cumin in a food processor to a smooth paste.

  2. Add lime juice and salt. Mix well and store the chutney in an airtight glass container in the refrigerator. Enjoy!
