  • Buy locally grown organic ingredients, if possible

    • Select seasonal veggies: Onions, Carrots, Cauliflower, Celery, and Zucchini.

    • Homemade organic ghee.

    • crushed garlic and ginger (1 tsp each)

    • Rich vegetable broth, 4 cups

    • Rock salt (saindhav) and pepper to taste

    • Chopped cilantro for garnish.

  • Vegetable soup, a blend of fresh vegetablees, brings forth Sattvic qualities, promoting a clear mind and a nourished body.

  • If using spicy or heating vegetables, balance with cooling ingredients or consume in moderation.

  • • Choose vegetables that are in season for optimal freshness and vitality.

    • Opt for brightly colored vegetables, indicating richness in nutrients.

    • Bypass any veggies that are wilted, have dark spots, or insect damage.

Recipe Serves 3-4

Directions:

  1. Warm the ghee in your sauté pan over medium flame, introducing the seasonal vegetables to a gentle sauté.

  2. Stir in the crushed garlic and ginger, sauté well. Pour in the vegetable broth.

  3. As the soup simmers, season with salt and pepper. Taste and adjust as per your preference.

  4. Ladle into bowls, garnishing with the fresh cilantro.
