Serves 2-4
Ingredients (Buy locally grown organic ingredients, if possible)
2 cups chopped seasonal veggies (Onions, Carrots, Cauliflower, Celery, Zucchini)
1/2 Tablespoon homemade organic ghee
2 teaspoons crushed garlic (optional)
2 teaspoons crushed ginger
4 cups vegetable broth
Rock salt (saindhav salt) and pepper to taste
Cilantro for garnish, chopped
Directions
1. Heat ghee in a sauté pan over medium heat and sauté the seasonal veggies.
2. Add crushed garlic, ginger and vegetable broth and let it simmer uncovered for few min.
3. Add salt and crushed black pepper to taste. Serve hot.
Tip
Garnish with chopped cilantro before serving.
